Ingredients:
140 g plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
115g butter, at room temp
165 light brown sugar
1 egg
1 teaspoon vanilla esence
265 crunchy peanut butter (wow, expensive cookies if you buy branded peanut butter.. :P)
Steps...
- Sift together the flour, bicarbonate of soda and salt and set aside.
- Cream your butter and sugar until light and fluffy using electric mixer. Add the egg and continue beating to blend.
- In another bowl, mix the egg and vanilla, then gradually beat into the butter mixture.
- Stir in the peanut butter and blend thoroughly. Then, stir in the dry ingredients (#1). Refrigerate for at least 30 min...
- Preheat oven to 180C.
- Make round shape and press flat with a fork. Make a criss-cross pattern. Bake 16-18minutes until lightly coloured.
